Kingfish Napa Valley Cabernet Sauvignon 2007

Tasting Notes:

Aged 3 years in French oak barrels, this elegant cab is smooth and complex. Flavors of blackberries and cassis mingle with chocolate and spice. Not too extracted or overpowering, this wine can pair with practically anything.

Technical Notes:

2007 was ideal for cabernet in the Napa Valley and Chalk Hill AVA’s. A long, cool ripening season allowed us to hang the grapes on the vine longer for greater intensity and flavor.
The 2007 Kingfish Cabernet Sauvignon was made from 100% Cabernet, 85% of which was from Napa Valley and the remainder from Chalk Hill. Grapes were destemmed and crushed directly into small open top fermenters and punched down by hand. The must was cold soaked for 24 hours and then allowed to warm slowly with the onset of native yeast fermentation. After fermentation, the wine was pressed with small, artisanal basket press, settled and then racked to oak barrels. The wine was bottled in August of 2009.
